Although my early life healthy ideals of a toasted white bagel covered in jam and a gigantic glass of orange juice for breakfast have been shattered, the tangy citrus fruits still have a prime role in healthy nutrition. They deliver a high dose of vitamin C, moderate amounts of fibre, folate, lycopene, potassium and many other phytonutrients.

 

They are an excellent accompaniment to a protein and fat heavy breakfast and have many versatile roles in salads, sauces and dressings. Also, don't forget about the rind - lemon, lime, orange and grapefruit zest is great on chicken and fish, salads and spicy soups.

Fantastic citrus combinations:

Ruby red grapefruit, avocado, goats cheese, balsamic (as a salad base)

Lemon, ginger, cilantro (add chicken and veggies)

Lime, chili pepper, cashew (marinade, salad dressing)
