Cauliflower Quiche

This is a recipe that sort of just happened one night when the refrigerator had some strange contents, but produced great results.

  • 8 eggs
  • 1 cup grated sharp cheddar
  • 1 whole cauliflower head
  • 2 tbsp coarse mustard
  • salt and pepper to taste

Clean and trip cauliflower head and break into bite sized pieces. Place them all in a 2 quart casserole dish. Whisk eggs until frothy, add cheese, mustard, salt and pepper. Pour over the cauliflower, making sure that all pieces are covered in egg mixture.

Bake at 350 F for 30 minutes or until firm and golden brown. This tastes great warm or cold.
